How to make Dal Makhani

Dal Makhani is a popular vegetarian dish from the Indian subcontinent, made with black lentils (urad dal) and kidney beans (rajma) simmered in a creamy tomato-based sauce with a blend of spices. Here is a simple recipe to make Dal Makhani at home:

Ingredients:


  • 1 cup black urad dal (split black lentils), soaked overnight

  • 1/2 cup kidney beans (rajma), soaked overnight

  • 2 large tomatoes, pureed

  • 1 large onion, chopped

  • 2 cloves of garlic, minced

  • 1 inch piece of ginger, grated

  • 2 green chilies, chopped

  • 1 tsp cumin seeds

  • 1 tsp coriander powder

  • 1 tsp garam masala powder

  • 1/2 tsp red chili powder

  • 1/2 tsp turmeric powder

  • 2 tbsp butter or ghee

  • 2 tbsp heavy cream

  • Salt to taste

  • Fresh cilantro for garnish


Instructions:


  1. Drain the soaked lentils and beans and add them to a large pot. Add enough water to cover the lentils and beans by 2-3 inches and bring to a boil.


  1. Reduce the heat and let the lentils and beans simmer until they are soft and tender, about 30-40 minutes. Drain any excess water and set aside.


  1. In a separate pan, heat the butter or ghee over medium heat. Add the cumin seeds and let them sizzle for a few seconds.


  1. Add the chopped onion, minced garlic, and grated ginger and cook until the onion is soft and translucent, about 5-7 minutes.


  1. Add the chopped green chilies and cook for another minute.


  1. Add the pureed tomatoes and cook until the mixture thickens, about 10-15 minutes.


  1. Add the coriander powder, garam masala powder, red chili powder, and turmeric powder to the tomato mixture and cook for 2-3 minutes.


  1. Add the cooked lentils and beans to the tomato mixture and stir to combine.


  1. Add enough water to get the desired consistency and let the dal makhani simmer for 10-15 minutes.


  1. Stir in the heavy cream and season with salt to taste.


  1. Serve hot, garnished with fresh cilantro, and with rice, roti or naan.
